Roasted Chicken

I love a roasted chicken. I love to grab one at whole foods (either naked or salt and pepper as some of their roasted chickens have extra ingredients that I don’t agree with). What I love more than that though is this roasted chicken recipe. It’s beyond tender juicy chicken…the flavor is outstanding, and it’s super easy to make!

Ingredients:

  • 4-6 # whole chicken
  • 4-5 carrots, peeled and chopped 
  • 1 onion, sliced
  • 1/2 tbsp thyme
  • 2 tsp Rosemary
  • Sea salt, pepper to taste
  • 4-5 minced garlic cloves 
  • 1/2 lemon
  • Grassfed butter, about 2 tbsp
  • Olive oil

Method:

Preheat oven to 425. Slice the onion, peel and chop the carrots. Place them in a roasting pan with some olive oil, salt, thyme & pepper.

Take the chicken and remove the giblets. Place chicken on top of the onions and carrots and rub the melted butter all over. Pat with lots of sea salt and pepper and thyme. Stuff the garlic inside the chicken with the lemon and lots of thyme.

Place in oven and roast for 1.5 hours covering it with foil halfway through. Remove from oven and let sit twenty minutes. Serve!
