Paleo Meatloaf (with BBQ)

I was going to make meatballs with these same ingredients but decided a meatloaf was way easier. So here’s my creation of yumminess!

ingredients:

  • 1 lb grassfed beef
  • 1 lb Italian sausage
  • 1 head cauliflower, riced or chopped well
  • 1/2 onion, chopped and diced
  • 3 cloves garlic, minced
  • 1 6 oz can or jar organic tomato paste
  • 2 eggs
  • sea salt, pepper, basil

method:

Preheat oven to 400. Butter a large glass baking dish. Mix everything well in a large bowl, using hands to get it all incorporated. Bake for 45-50 mins.

Let cool and drizzle with clean bbq sauce – or make your own! I like to buy this kind from Whole Foods that has no artificial anything and it’s sweetened with honey! A little goes a long way. Eat up y’all!!

Serves 8-10. I recommend eating with a large side of steamed broccoli!
